  • 2 pounds ground beef
  • 2 medium diced onions
  • 2 minced garlic cloves

  • 1 & 1/2 tsp kosher salt

  • 16 ounces of cottage cheese

2 pounds skirt steak

For the rub

  • 2 tsp ground cumin
  • 2 tsp salt
  • 1 tsp ground pepper
  • 1 tsp chile powder

For the marinade

  • ¼ cup fresh lemon juice
  • 2 tsp lemon zest
  • 1 tbsp Worcestershire sauce
  • 2 large minced garlic cloves
  • Extra-virgin olive oil

For veggies

  • 1 large onion, sliced
  • 2 bell peppers red or yellow color, sliced in dice shape
  • 1 green bell pepper, sliced in dice shape
  • 1 jalapeno, minced
  • 2 large garlic cloves, minced
  • ¼ cup chopped cilantro
  • 4 large flour tortillas



Take a paper towel and pat the steak to dry the extra moisture. Mix all of the rubbing ingredients in a bowl, apply a good rub with your bare hands on both sides of the steak and put it in a zip-closed bag.


Mix all the ingredients of marination. Reserve 2 tablespoon of the mixture and pour the rest in the steak bag. Move the bag to coat the mixture in the meat thoroughly. Place the bag in a flat pan and refrigerate it for a minimum for hours to a maximum of 24 hours.


Pour 2 tablespoons of olive oil in a cast-iron skillet of large size, heat it on medium-high heat. Add onions and stir till they are soft. Add bell peppers and cook till they are soft. Then add chili peppers and stir for 2 minutes. In the end, add garlic and cook for 2 more minutes. When it is done, sprinkle cilantro.
Heat grill to medium-high, pat down the steak, and cook both sides. Once it is done, give it a rest and then cut into pieces. Serve it with veggies, cream, and black beans.
